This is our claim - in our bakery and our restaurant. We have accepted the challange that whole wheat flour is more difficult to handle than refined flour hence our bakery literally turns into a laboratory to adjust baking techniques and try out new recipes. We are proud that our products are without any preservatives, matching the increasing healthy approach and are really tasty.

Patience, Passion and knowledge. Baking needs time (patience) if you want to create products without refined and artificial ingredients. It needs passion to look into all baking processes. And it needs knowledge to understand and to control chemical and biological processes, especially during fermentation and proofing.
