Have you ever been to an organic farm?

Peter was running a hospitality business at Indiranagar for several years. During this time, while searching for fresh ingredients for his menu, he met with the founder of Dragonfly Organic Farms, an USDA Certified farm with cultivation at Kalrayan Hills and Coorg. Peter’s first visit at the Kalrayan Hills farms was a game changer; cooking with freshly harvested organic vegetables from the fields and the fun he had creating new flavors was exciting. On his return to Bangalore, he started using Dragonfly’s products in his restaurant and response from his Chefs and guests were overwhelming.

Sustainable and meaningful concept

Over the next few years, Peter spend a lot of time working with people at the farm brainstorming about creating a menu with fresh organic produce, developing a supply chain to bring fresh ingredients to the table, dealing with reduced shelf life when one does not use artificial additives or preservatives, creating new dishes, relearning how to cook with organic produce and so on. “But it is worth the effort when you see the results”, says Peter.

Revive traditional processes

Artificial additives have changed the food industry: mass production, shorter production time, incredible shelf life. And the industries were celebrating it as convenient food. Do you know how many food additives are in one loaf of bread? Do you know that some artifical ingredients don't need to be labled? We have decided not use any of those artificial items and focus on traditional food and baking processes as it was done decades or even centuries ago. The main difference is: time. It takes around 24 hours to produce a sourdough bread. But, again, it is worth the time and effort.
